As our name may suggest, the world is full of many many kinds of honey. Since Honeyful’s opening we’ve been exclusively talking about monofloral honey. That is because it’s not common in Thailand even though most other countries produce and consume honeys coming from various types of local flowers.
Naturally, honey gets its aroma and flavor from flower nectars, but if we want a particular flavor we could also infuse honey with herbs or fruits. When we say ‘Orange Blossom Honey’, that honey comes from orange flowers. But when we say ‘Strawberry Honey’, here what we actually mean is Strawberry-infused Honey.
One thing that really surprised us when we researched honey infusion is how well honey serves as a medium for extracting and preserving flavors. In contrast to using brine or using syrup, which gives extremely salty or extremely sweet preservatives, opting for honey results in a much more balanced and fresh flavor. If you think that everything on Honeyful’s menu is going to be sweet, this will surprise you. We choose extremely sour or bitter fruits to begin with, so that we will end up with an infused honey that is just right.
It’s taken us a long time to develop this collection of infused honeys. Combining these fruit flavors with carbonated water or iced tea makes for the perfect summer drink. What’s more? The chewy texture of the fruit after it has absorbed honey is weirdly satisfying.
