In addition to being a honey lover, we’re also a devoted fruit lover. So it comes as no surprise that one day we’ll launch a sorbet menu. But any ice cream maker will know the challenges that come with crafting sorbet. Having no fat, sorbet can easily turn too icy which is not an enjoyable texture. Today, we’ll let you in on a little secret that honey helps to soften and greatly improve sorbet texture.
Most people assume that adding honey to dessert will overpower other flavors. That isn’t the case if you know how to use honey skillfully. It is both an art and a science to strike just the right balance of different sugar types. We aim for the best of both worlds to achieve smooth texture and deep flavors.

We piled up strawberry honey sorbet, yuzu honey sorbet and yoghurt ice cream into a basket made from brown sugar tart and then top it off with fresh cut fruits.
